Sustainable Sushi Featured in Time Magazine

The entrepreneurs behind FishWise partner restaurant, Tataki, were recently featured in Time Magazine as 2009 Heroes of the Environment. Casson Trenor, a former FishWise employee and author of the book "Sustainable Sushi: A Guide to Saving the Oceans One Bite at a Time", was highlighted alongside his partners, sushi chefs Kin Lui and Raymond Ho. Tataki, located in San Francisco, is America's first sustainable sushi restaurant. Casson, using his experience from FishWise, has helped build this successful model that eliminates unsustainable choices such as farmed salmon and replaced them with arctic char that has a very similar taste and texture to salmon while being far more environmentally friendly. Continuing with that success Casson recently helped open up a restaurant in Seattle following the guidelines created at Tataki.
